I love brunch at home and I've decided that I'm going to post a few brunch recipes on the blog from now on. Sometimes they won't even be recipes but more ideas or suggestions as they'll be so simple to make.
One of my favourite brunches is egg and avocado on toast, it's so simple yet so tasty. I'm addicted to avocado and could easily eat some at every meal for the rest of my life. I might be exaggerating a little bit but anyway, if you haven't tried this simple combination yet, you should!
My favourite moment is when I cut the egg with the tip of my knife and the egg yolk bursts out, I just love it.
Doesn't it make you hungry? With Tabasco it's even better...
Egg and Avocado on toast (serves 2)
Ingredients
Very good sourdough bread
1 avocado
2 eggs
1tbs lemon juice
salt
pepper
Tabasco
Method
Boil water in a kettle and then put into a pot and leave on a medium heat
Using a spoon, swirl the simmering water
Crack an egg into the middle of the swirl and leave for about 3 minutes
De-seed an avocado and spoon the flesh into a bowl
Add salt, pepper and lemon juice and mash with a fork
Slice the sourdough bread and stick it under the grill for a few seconds until toasted
Spread avocado on the toast
Remove the egg from the water with a slotted spoon and place on top
Season to taste
Add a good dash of Tabasco if like me, you like it spicy!
