Brunch idea: Bacon and maple syrup pancake recipe
My weekday breakfasts are very boring (porridge, fruits and tea) but when the weekend arrives, it's all about hangover cures and decadent brunches.
It's pancake Tuesday soon but we couldn't wait and had a pancake Saturday instead. I'm all about the classics and my favourite pancake topping is bacon and maple syrup.
These pancakes are fluffy and light so you won't feel to guilty about adding lots of maple syrup to them. It's naughty but so good!
Bacon and Maple Syrup Pancake Recipe (makes 6 pancakes - enough for 2 people)
Martha Stewarts' recipe
Ingredients
1 cup all-purpose flour
2 tbs sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
2 tablespoons unsalted butter, melted
1 large egg
6 slices of bacon
Maple syrup
Method
Mix the dry ingredients (flour, sugar, baking powder, baking soda, and salt) in a bowl
Whisk the egg, buttermilk and melted butter in a separate bowl
Add the flour mix to the buttermilk mix while whisking
Put a pan onto a medium heat and lightly oil
Pour some batter on the pan and cook your pancake for about 3 minutes on each side
Switch on the grill to 200C
Pour a little maple syrup on your slice of bacon and rub it in, covering both sides
Place the bacon under the grill for about 5 minutes, or until crispy
Stack your pancakes with the slices of the bacon in between and drizzle maple syrup on top
